Research is essential to advance the nutrition and public health fields. I am passionate about both areas being a dietitian, and I am proud to contribute to the scientific community with my team of co-authors. I am grateful to work with supportive colleagues who strive to enhance the policies, systems, and environments that influence health behaviors.
This paper details the work we are doing to improve the food system in one rural Appalachian community. It explores the relationship between food insecurity, SNAP participation, shopping practices, and diet patterns. Our next steps include continued collaboration with community partners to encourage healthier choices and leveraging existing relationships to increase access to healthy foods.
